Today is the ten year memorial of my mother-in-laws passing. I will always remember her pasta with escarole. The combination of olive oil, tomatoes, garlic, and escarole are mouth watering. She used to use long pasta. I have of course added my own ingredients. I also use a smaller soup pasta such as bowtie, ditalini, or small shells. The best part is the little chunks of italian cheese that don’t completly melt!
