What better comfort food than a hot bowl of soup. Cream of Yukon Gold Potato soup is make from the yukon gold specialty potato. Starting with a roux of oil, butter, and flour, being careful so it does not brown. Then add onions, celery, and carrots. Add some vegetable stock, salt, and pepper. Bring to boil and simmer for about 20 minutes. Be careful not to scorch on bottom of pan. Add milk and bring to slow boil again. Turn down and simmer another 10 minutes. Meanwhile cook diced Yukon Gold potatoes. Once cooked, add to soup. Top it off with some heavy cream to give it a superb taste.
