Cupcakes are a favorite for all ages. They are a small cake made to serve one person. Cupcakes came from cakes that were baked in pottery cups. The ovens they used took a long time to bake. Making them smaller sped up the baking time.

Before frosting a cake, put it in the refrigerator to get cold. This will help with the crumbs when frosting. Use a very spreadable frosting so it will glide onto the cake.

Holiday time is a special time of the year. Growing up we lived with my grandma. She always made Thanksgiving dinner all her life. She said it was her favorite meal to cook. She would cook for 40 people in an apartment size stove. Twelve pies were baked on Tuesday. On Wednesday before Thanksgiving she and her cousin would prepare everything, of course I was always helping.
Christmas was also at our house. For weeks we would bake cookies. All of the traditions, including Italian cookies. Of course for Christmas it was pasta and meatballs for sure. At my restaurant, I cook with family traditions. Catering is our specialty. In this era everything is so busy. There is no time to make things all month long. The concept of a restaurant soup company started as a vision back in 1984 at our fruit market, Tom Maceri’s Fruit Market on Detroit’s eastside. There we developed soups made with our own produce that is received daily direct from growers to the warehouse in Detroit. The “For Real” vegetable was a hit. Made with over 25 vegetables, it is still a favorite today at the restaurant. Some restaurants make their soup in house. Some buy them frozen from manufacturers. We make over 150 varieties of soup from scratch in house. Alot of the varieties are made from old family traditions. My great grandma Angelina had a restaurant in Detroit, later relocating to Tucson. My grandma Pauline helped her in the restaurant. My mom and I lived with grandma. She gave me the inspiration and knowledge to cook and bake. The soup concept came clear to me while my son had to eat dinner through a straw for his 15 oral surgeries.

Comfort foods help relieve the stresses of life. Foods with a personal meaning are considered comfort foods. They can remind you of something from childhood, a particular food your mom gave you when you where sick, or just something grandma used to make. Comfort foods are satisfying and are usually a carbohydrate food. There is a reason to go for the ice cream in the freezer, the peanut butter and toast, or the macaroni and cheese. It provides us with a sense of nostalgia.
When I was sick, my grandma used to give me her chicken pastina soup and tea with milk and sugar. To this day, it still makes me feel better.
