Italian Kitchens in the Basement

Most Italians had kitchens in the basement. Growing up living with my grandma, we had one. The upstairs kitchen was for company. We ate all our meals downstairs. It was for cooking too. My grandma’s mother had a restaurant in Detroit. She would teach me everything about it. Her daily cooking and baking was done in the basement. If we were having company we would eat upstairs.

Thanksgiving meals were cooked and ate in the basement. There was more room there. She would start cooking 3 days before. Every year she would tell me the stories of how she cooked for 50 people on an apartment size stove. These stoves only had two burners. The oven was only that wide also. I started cooking at the age of six. We would make the old school Italian cookies. When I was 18, and going to get married, she made me copy all of her recipies in a spiral notebook. She then taught me her pasta sauce. It was from the restaurant secrets.  All of my life that is what we did and talked about. Two days before she passed away we were talking on the phone. I asked gram, “Should I have a restaurant or cater?” She said, “I would cater, that way you would know exactly what they want.” Listening to the restaurant stories all my life, I decided to do both.  That night she also told me of the secret of how she changed the Italian cookie recipie. Since my mother never wanted to learn, she had me to keep on the legacy. I cook from family traditions and restaurant secrets.
