The USDA inspects commodities of fruits and vegetables against 158 official grade standards. They express an item’s color, size, shape and other quality and condition characteristics. It gives the produce industry a common language for buying and selling. The different grades depend on the produce. They include extra fancy, fancy, number 1 and number 2, being the lowest quality.  When you find produce with different prices at the fruit markets and grocery store, they may be just lower grades.
