They express an item’s color, size, shape and other quality and condition characteristics. It gives the produce industry a common language for buying and selling. The different grades depend on the produce. They include extra fancy, fancy, number 1 and number 2, being the lowest quality.  When you find produce with different prices at the fruit markets and grocery store, they may be just lower grades.
